We did not run the zone read option well in 2007 until the bowl game. How the QB reads it, like any option, is critical. Dalton improved a bunch between the last regular season game and the bowl game in 2007.
And if you run the speed option, you are going to run a lot of short side options. Dalton never had the speed to go wide, like Boykin. But the QB has to make a very quick decision on any option play, or it will look ugly.
