My family and I are coming to game Saturday, I was wondering how hard is it to get a parking spot in the St. Stephen’s Presbyterian Church parking lot? I know it opens 3 hours before the game. The other option is just to buy a pass on stub hub for the EC3 lot. That’s were we parked when we had season tickets.

I haven't personally parked over there before games, but have used the Doxology/McKinney Bible church parking lot and the free shuttle bus which drops you off at the practice fields/entry to Lot1. They have about 900 spots out there and lots of room around an hour and a half prior to game time. http://gameday.gofrogs.com/parking.html
I did see that one, but they do not allow tailgating.
