Love a Trader Joe's Christmas! Every year I have bought an assortment of treats from there, and let my staff pick an item as a gift.
Leaving the job soon (and Covid means we aren't in person for meetings) so I went with gift certificates this time.

Three pounds of hand-cut and -trimmed chuck simmering slowly, just enough to jiggle the lid once in awhile...another hour and I'll add the spices...then the thickening agent...another quarter hour of watchful attention and it'll be taken off the flame and "rested" until tomorrow lunchtime. Add some hot yellow corn tortillas, a couple of red tamales from Gussie's Bakery and my traditional Christmas Chili lunch is served!
